    yes, full fat cream...heavy whipping cream...the kind you whip and put on berries for dessert...at least that's what we do in Canada, eh...

    I was so confused when I went to america and wanted to buy cream. There was a whole row of 'cream' that comes out of a can, and then yeah, 'Heavy Whipping Cream', which was the stuff that I think of as cream.

    Of course, the top half of my raw milk is also cream......

    When it comes to cream, the differences essentially come down to fat content:

    Light, coffee, or table cream (1830% fat)
    Medium cream (25% fat)
    Whipping or light Whipping cream (3036% fat)
    Heavy Whipping cream (36% or more)
    Extra-heavy, double, or manufacturer's cream (3840% or more).

    Whipping creams also have additives to help them maintain peaks and stay fluffy. I'd rather not have the additives, but if I cannot find heavy cream, I have no qualms about using whipping cream instead.
