Cut them up and put them back into a pan with diced tomatoes and some mushrooms. Heat through and serve with green beans sauteed in bacon grease.

Slice them up and brown them, then toss in red and orange bell peppers, onions, garlic, (any other veg you feel like, sometimes I add chard or kale) and then throw in a splash of wine to deglaze and a bit of tomato sauce. I then make it spicy, but it's good mild as well.![]()
