Our rainy spring weather has suddenly become gorgeous clear skies and bright sunshine. I'm craving a huge bowl of ice cream, or a fruit juice Popsicle or...well, you get the idea.
Any Grok-approved recipes that aren't too high in carbs?

My daughter made some ice lollies with a can of coconut milk, some blueberries and some raspberries and a tiny bit of double/heavy cream all pureed together, then poured into moulds and frozen. They are really delicious and extremely filling!

I make these. 250g peeled ripe bananas (I always have these in my freezer), 1 x 400ml can coconut cream, 5g (1 heaped tsp) cocoa powder dissolved in a little hot water. Blend all together and divide between 8 popsicle moulds. Freeze.

Freeze 1 cup of large blueberries.
Pour them into a bowl and cover with about 1/4 cup heavy whipping cream.
The cream freezes around the berries and it tastes great.
Blueberries aren't hard as a rock when they are frozen -- they are quite chewable.
