    Venison Andouille Sausage Recipe???

Anyone have any good ideas? This is something new I had done this year with my venison and I'm looking for a good recipe for dinner tonight.

I'd love to see a recipe if it turned out. I'm just getting in to making sausage these days and will have access to a fair amount of venison in the future. Thanks!

It was actually pretty good IMHO for just throwing some stuff together. I sauteed onions, mushrooms and some peppers in two small pats of butter, added in a little garlic and some seasonings to taste (I used mostly basil, oregano and some thyme) then threw the sausage in until cooked. Finally I added some tomato sauce, so it ended up pretty much like a thick spaghetti sauce. I added just a dash of parmesan cheese for flavor. My wife ate it on top of noodles (she's obviously not primal) and I ate the sauce by itself since it was so thick.

Unfortunately I'm one of those people who is not very picky when it comes to food, so usually I'll just throw whatever we have in the kitchen together until it tastes good to me, but I never write any of it down. I probably couldn't cook the same thing twice.
