    Fish stew for lunch and I am blissed out. It really is so much better made with butter instead of vegetable oil. *insert sigh of contentment* And so simple and fast.

    I can now give a tutorial on how to wreck your cast-iron frying pan. Don't ask. Fortunately it had nothing to do with lunch... And why is it that the smoke detector will go off when a bit of fat burns in the oven and ignores the situation when there's smoke all over the place? Sheesh...

    ETA: What do you guys do with canned tuna besides salad? I'm looking for an interesting new idea or two. All my old ones involved grains... Hmm, tuna casserole with veggies instead of macaroni? Thoughts?

    mmmm........... i love tuna! We can our own when we are fortunate enough to be gifted with enough of it to can.

    I've had the same problem - what to do with the tuna if you aren't going to make a sandwich or a casserole? I've used it to make chowder - VERY yummy! I put it on salad - just plain, or mixed with mayo. You could use it for lettuce wraps with the mango salsa I mentioned in my journal. EASY PEASY....... mango, cilantro, red onion, cucumber - chopped nicely! Its wonderful!

    I'm anxious to see what others have to offer cuz I still have a few jars of home canned tuna to use up!

    I use zucchini rounds as crackers and top with tuna mixed with mayo and dill relish. I also "stuff" celery sticks with the same mixture. Sometimes I add yellow mustard into the mix.

    Just once, once, I would like to use my grater without grating my thumb. Seriously.

    At least the salad was really good... Feta and olives and walnuts and veggies. You can always tell when DD is eating here...

    Thanks! It feels like slow going but it does tend to slow down as you get closer to the goal. Two pounds a month is still a decent rate, I figure. It's weird though, because I was feeling so bloated and fat yesterday. As I am now, but that might have something to do with the prodigious amounts of salad I ate. Lots of greens at least, so it should be more volume than calories.

    That is a great idea for snacking! But hey, why not for a meal? Just have a whole bunch...

    I am blissing out over the organic veggies that are landing on my doorstep every two weeks. It makes such a difference just to be getting things fresh-picked from the farm. And they pre-wash almost everything. The head lettuce, obviously not. I had to wash my red lettuce (poor baby) but could hardly believe how crisp and beautiful it was. You never see it like that in grocery stores.

    That sounds lovely Judg! I am contemplating joining a local farm CSA for organic produce next year. I can grow quite a bit usually, but with us probably moving sometime in the new year to a new place, it might not be the most productive summer. We like zucchini chips for putting all kinds of things on - salsa, guacamole, etc etc. I have not tried it raw - I'll have to try it with the family and see if it gets a thumbs up or no. You just never know
