    By request, Serendipity Salad

    Primal Fuel
    Cantaloup-feta Salad

    1/2 small cantaloup, cut in bite-size chunks
    about 200 g. feta cheese, cut in small pieces
    1/2 cucumber, quartered lengthwise, seeded and sliced thickly
    1/2 red pepper, cut in strips
    a couple of handfuls of walnut pieces
    a couple of handfuls of seedless red grapes
    2 green onions, sliced

    Season with olive oil, balsamic or apple cider vinegar (white vinegar would make for better colours, but would be less tasty), and salt to taste.

    White balsamic would probably be fantastic. Cuke can be English or ordinary, the latter should be peeled, of course.

    This recipe serves two. I used to serve it with bakery rolls, might have to make bigger helpings now to compensate. This is a favourite summer salad for me.

    I've thrown in dried cranberries or raisins instead of the grapes, red or Vidalia onion instead of the green onion (loses colour though). Fresh chives would work well.

    Okay, that cantaloupe-feta-salad thing is fantastic! You need to get that in the readers cookbook. I used raspberries instead of grapes because I had some great ones, and the grapes were sad. It is all I can do to stop from making up another batch and eating it right now!

    Dairy - including butter

    I'm choosing to do this......... I don't HAVE to.

    Are you all well? Sorry you missed the picnic, but it'll be a good excuse to have another one soon. I figure if ecks is out walking barefoot, there's probably not a lot of snow on the ground:-)

    Is your husband still a pastor? I would think that would be a lot of responsibility for both of you.

    It's a good day. For the first time in two years, I'm not in a state of panic about that phone ringing. I wonder where it is!
