I loved how this recipe was easy and fast to put together and tasted amazingly tender and flavorful. The only thing for me was to remember to factor in marinating time. Totally worth the time in the fridge though![]()

Made this last night, great stuff. I used the original recipe, I would not recommend using the coconut oil as it solidifies when putting in in the refrigerator while marinating.
I think that is going on my menu for next week
This looks so delicious! What would you recommend to serve it on top of? Maybe 1/4C of cooked white rice with a stir fry of various peppers?
