Thanks Siobhan Your new scants sound so lovely! Your opera day sounds really nice - I've never had the opportunity to go and hope to one day. I think my kids would love it too

You should go! Every year the Met simulcasts 10 or 12 productions. Lots of operas have a historical context, it's a great learning tool.

This morning before church I put all the remaining chili in the slow cooker with a can of tomatoes - it was just too spicy. I don't mean too hot - too many spices. I just dumped in too much and it was too much for my digestive system. It's better now, much more palatable.

Going hiking with a friend today and then having dinner at another friend's house. Woot! I'm baaaaaack. No more dreaming over unworthy men.

Beautiful day - we are into the heartbreakingly beautiful part of the year. Everything is blooming and growing and the birds are bringing up babies. I like waking up in the middle of the night and seeing the stars and the moon through the skylights.

Great day yesterday and after sleeping really well I am ready! Ready for what? Anything! Had a great time hiking and talking with my friend - we went to a fairly challenging spot, pretty serious elevation changes and a rugged trail. Good times! Then had a great dinner with a couple of friends - homemade Finnish salmon soup. I highly recommend this. Finnish Salmon Soup - Lohikeitto This isn't the actual recipe, just one I goggled. We had zucchini instead of potatoes. My friend knows I am a non-gluten person but of course there is always a slip-up. I was horrified to see her pouring non-fat half and half in the soup at the end. AAARRRGGGHHH. I did not say anything, of course. Mostly it just makes me sad. She is quite overweight and I know she worries about fat and calories. This soup would be delicious without any cream, or I am sure it would be wonderful with coconut milk or cream. (What soup isn't?) She is a very gifted artist and asked if I would be interested in sitting for a character study. Although it is a bit scary to think of what might result, I would like to do this. This is not a portrait that will flatter me - I will probably be surprised at what she sees.

Came home and watched Cosmos which I have been enjoying very much. I think Fox is doing a nice job in remaking the classic series, updating it but remaining true. I was starting to nod off towards the end, and I was asleep by 10:30 PM. This seems to be my new pattern. I'm liking it! Woke up at 6:30 AM. I have to work tonight and there are some chores to be done, so I'll getting to it.

Also, as of yesterday my heel is completely healed.

    Tip for Today

Do what you want to do.

“Twenty years from now you will be more disappointed by the things that you didn’t do than by the ones you did so. So throw off the bowlines. Sail away from the safe harbor. Catch the trade winds in your sails. Explore. Dream. Discover.” - Mark Twain

Awesome quote. And I really don’t have much to add to that one. Well, maybe to write it down and keep it as a daily reminder – on your fridge or bathroom door – of what you can actually do with your life.

And I have finally discovered the author of these little bits - Henrik Edberg.

This is from the "Things Could Be Worse" school of thought:

I think JudyCr introduced me to this cookbook:

Preorder Nourished Kitchen: Farm-to-Table Recipes for the Traditional Foods Lifestyle

You might want to have a look at it. I was fortunate enough to get a copy through ILL, but I am going to buy one for myself. Fantastic recipes. It's not paleo - it's Weston Price and includes a grain chapter. But the other recipes are gluten-free, and McGruther is no fan of sugar, as you might guess. Also lots of fermented stuff. It's really all about traditional foods.
