Hey fellow Grokkers,
I just bought a cut-up Rabbit from the freezer section at the local Co-Op, I had never seen it before, and had to buy it. How should I prepare it? Thanks in advance!

Haha, I was just wondering about this myself, there was an article in the New York Times about raising rabbits the other day.

I love rabbit, and I usually cook it in a similar way to chicken- usually in the crockpot. Sometimes you have to add substantial fat though otherwise it turns out dry.

Maybe you could try making a confit? That would solve the fat problem!

I'm doing one for Ladies' night tomorrow.
Gonna cut it up, brown it, then throw it in the slow cooker with onions, carrots, garlic/spices and a can of stout.
Might make a sour cream gravy...ya never know ;-)

I just found a thread about this from a couple of months ago, I think that I like the idea of browning it in bacon/pork belly fat and then putting it in the slow cooker all day...

Rabbit with mustard sauce is a classic. Google and you will see many versions.
