    Hi everyone, I have been trying to make ice cream using coconut milk, yolks, flavor and some sweetener. Unfortunately it freezes way to hard in my ice cream maker. I was wondering if it's because I don't use sweetener? Or do I just need a better ice cream maker?

    A little alcohol will keep it from freezing so solid. Really, that's the only thing I can think of to soften it up.

    I read that somewhere as well, just afraid it will taste of alcohol?

    Try rennet tablets. They helped smooth mine out nicely.

    I think one or two. There were instructions in the box. They had some recipes for cottage cheese, too!

    So...debating buying an "ice cream maker." Are you all talking about one that is a machine for the counter, or one that sits on the deck (per say) and uses a motor & rock salt? I have the motor/rock salt variety....does primal ice cream work in that variety does anyone know?

    we don't use it often though. We still buy ice cream from the store.
    Scratch that.
    We buy gelato.

    I always recommend Talenti Gelato, Haagen Dasz 5, and Breyers original for primal ice cream enjoying

    ice cream is just about the healthiest paleo 'cheat' out there, particularly if you don't go overboard on the sugar. better yet, use rice syrup - no fructose!! i'll make it with heavy cream, egg yolks and rice syrup and i consider it muthaf*ckin health food.

    sorry for swearing, this is passion.
