    Milk and lactose

    Primal Fuel
    Does converting milk to Matsoni and/or Kefir reduce its lactose content?
    Tried googling this question but Im getting conflicting results.
    Any knowledgableperson know the true answer to this?

    My understanding is that there is very LITTLE lactose, but its not completely gone. Raw milk actually contains lactase which aids in digestion of lactose.

    That is my understanding too. Like yogurt - the bacteria have been eating the lactose and hence the yogurt has less lactose than the milk it is made from.
