    Savory Seafood Primal

    This is a Primal modification of one of my favorate recipes. It originally called for whole wheat penne but even without, this rocks!

    (ignore the penne in the pic)

    Serves: 2 Difficulty: Easy - for beginners
    --------------------------------------------------------------------------------
    Ingredients
    14 medium precooked peeled shrimp
    2 tbsp crumbled Gorgonzola
    3 C chopped baby spinach
    1 tomato, chopped
    2 tbsp chopped walnuts
    3 tbsp ready-made pesto
    --------------------------------------------------------------------------------

    Method
    In a large bowl, combine it all together.

    I made a variation with 1 can of tuna in replacement for the shrimp and it turned out remarkably good. I plan to try other fish to see what works best.

    I'd do this with bleu cheese or feta and use wild caught shrimp from Target. Throw some pear chunks in there for good measure. Yum!
