Well, I am chiming in late, but one of my favorite meatball formulas is 1/2 ground pork + 1/2 ground beef, plus a whack of spices. Mix well, roll into little 1" balls. Simmer in boiling water for ten minutes. Serve on wooden skewers with a sauce that complements whatever spices you used. (Guacamole and salsa if you used cumin and chili, for example.) My kids even like these cold in their school lunches(I'm sure being on a stick helps- everything tastes better on a stick!)
Our Costco has started selling coconut oil, so you might check there if you have any in your area.
@ Sabine. The meatballs turned out good - I did use 1/2 beef 1/2 pork, then added Italian spice, salt and pepper, garlic, onion, red and green peppers, eggs, almond meal, beef broth - and topped them with tomato paste mixed with BBQ sauce. I put a bit too much Italian spice - but they were still good. We still have some left over! I think that will be dinner tonight.
Okay last night I made the best meal I think I ever made!!!! I took chicken breast and sliced it thin for stir fry, cooked until almost done then added shrimp. When the juices cooked down I put in some Guy Fieri Pacific Rim sauce (yes - mostly sugar but excellent flavor). Then I made a chutney with cucumbers, onions, cilantro and mango, with salt and pepper. I put the meat in lettuce topped with the chutney and rolled them up!!! YUMMMY......... hubby and I raved that this was as good as ANY meal we've had in a restaurant! I was licking my fingers!!! It was excellent!
But alas....... back up to 187 again today. Up and down - Up and down!!!! GRRR. I need to see 185 on the scale so I know I'm making some progress. I shouldn't complain cuz last week I was bouncing around 191. So........in reality there is progress - not just steady downward progress. I had too much protein and not enough fat yesterday. If I had not eaten the almonds I would have been good on the protein, but that would have also dropped my fat and overall calories! Sheesh -- this is harder than I thought it would be. I'll try again today.
I'm going walking - then I'll have breakfast. There are LOTS of walkers bikers and joggers out this morning!
Not feeling so good......... for the passed 2 nights I've been suffering with a night-time stomach ache and feelings of nausea. Makes it hard to sleep when you're not sure if you're going to vomit or not. Today I had a couple eggs at around noon and a couple hours later I was in the bathroom......... with a REALLY bad stomach ache --- doing what you do in the bathroom when you have a REALLY bad stomach ache....... and I almost vomitted too! UGH! Now I'm really nauseous! Its 6 pm and all I've eated today are those 2 eggs. Hubby just fixed me a nice hot cup of chicken broth. I don't know......... tummy bug? Hope it passes quickly.
There is a tummy bug going around. My neighbor has been sick for two weeks. Her's is accompanied by fever and sore throat/neck. I hope you feel better soon.

thanks everyone. Still sick. Constant belly ache and frequent trips to the bathroom. UGH....... its going to be a chicken broth day I guess. I won't be going to the family lunch either......... bummer. On the up side - I'm back down to 186 again. @Jenn --- I sure hope this isn't the same 2 week bug that your friend has.......... I don't want to miss 2 weeks of work. But hey if I can only take in broth for 2 weeks I should lose a few pounds!

Thanks for the kind words, Tomi. Yoyoing is something that has always frustrated me, so I tend to stick to decisions once I've made them. Second-guessing myself constantly is just too tiring.
Why don't you just make your butter chicken with bacon fat or coconut oil? Or is there cream or something in there? I've never made it. And start making your own sauces with no sugar or some stevia instead of store-bought ones? Use a little arrowroot powder or tapioca starch to thicken them, and you'll have something healthier AND more delicious. Trust me, there's something about having something totally delicious and knowing that it's good for you at the same time that makes it taste twice as good.
