Brussels Sprouts with Bacon

1 tablespoon olive oil or ghee
2 ounces bacon or pancetta, chopped
1 small shallot, peeled and thinly sliced
pound brussels sprouts
teaspoon salt
pepper to taste
cup water

Preheat a large skillet over medium heat and add oil, then bacon and shallot. Cook, stirring occasionally, until bacon starts to crisp, about 5 minutes.
Meanwhile, put sprouts through food processor with slicing blade.
Add sprouts, salt, pepper and water to pan. Cook undisturbed until sprouts are nearly tender, about 10 minutes.
Turn heat to medium high and cook, stirring occasionally until any remaining water evaporates, about 5 minutes.
