I suspect boiling them to death is where they got their bad rap.

I like 'em just shy of tender. They're really good with Indian spices (garam masala, cumin, coriander, cinnamon), or I slice them thin and sautee in butter or (ideally) bacon with shallots.

Ha what a response! Roasting them definitely gets rid of the bitterness.
I have a great recipe where you roast them, and whislt they are roasting cut up and fry some bacon, set it aside, and mix in with the bacon juices some dijon, a tiny bit of honey/maple, and some white vinegar, then put the roasted sprouts and bacon back in and toss it through the juices for a yummy dressing.

well maybe I'll take one... smash it to bits... then fry it in butter with a chopped onion and a pound of bacon.... then ... maybe.. I'll like brussel sprouts.

    I love brussell sprouts!

I fry up bacon in ghee first, then pour all of it into a bowl with halved brussel sprouts. Add a little olive oil and then toss. Roast on a cookie sheet in the oven until crispy. Drizzle with Balsamic Vinegar and enjoy.

I probably have this once a week...

Having some pretty epic fried brussels now. Cooked up some pastured pork jowl, then shrimp, then scrambled eggs. Dump on plate. Toss in brussels and avo oil and cook until it gets up the rest of the egg that got cooked onto the pan. Serve over shrimp & jowl with kerrygold. Heaven!
