Soup recipes
Hey gang! I have been craving some sort of soup to take for lunches for the brisk spring days. Can you shoot me your best soup recipes? Maybe even a good chili recipe? I keep looking/searching, but haven't found any that jump out at me.

My favorite is a chili - 2 lbs of beef, chocolate powder, instant coffee or strong brewed coffee, minced onion and garlic, chopped bell peppers, can of diced tomatoes, chili pepper powder, cumin, salt, and black pepper all in a crockpot. (I don't measure - sorry). But it's really thick and sweet and so delicious!

Courgette/zucchini and mint soup is really nice - delicious hot, and refreshing when cold:
2oz butter
2 large onions, diced
2lbs courgettes, diced
2 pints chicken stock
large bunch fresh mint, leaves removed from stalks
salt and pepper to taste
Melt the butter in a pan, fry the onion until transparent but not browned. Add the courgettes and cook for another couple of minutes. Add the stock and half the mint. Cover, bring to the boil and simmer for 5 - 10 minutes until the courgettes are tender. Blitz, cool for a few minutes, add the rest of the mint, blitz again and season to taste. Lovely served with a swirl of double/heavy cream and a sprig of mint!

I love this soup recipe: Chicken and Shrimp Soup | Mark's Daily Apple
It makes a huge pot so I make it on the weekends and then keep the rest in the fridge for my husband and I to take to work during the week. I also use cabbage instead of cauliflower because cabbage is more affordable here in NZ at the moment.
