I just had my first paleo chocolate mousse and it was so unbelievably good that I still can't get over it.
1 can coconut milk
1/4 cup plus 1 T cocoa powder
1/2 tsp pure vanilla extract
sweetener to taste (I used a little stevia, but any dry sweetener will do.)
Instructions:
Open the coconut milk, and leave the can (or transfer to a bowl) uncovered in the fridge overnight. (Don’t shake the can before opening.) It should get very, very thick. (If it doesn’t, you’ve gotten a bad can that won’t work for the recipe.
Once thick, transfer to a bowl (you can opt to leave out the watery bit at the bottom of the can, if you want it even thicker) and whip in your cocoa, vanilla, and sweetener with a fork, or even beaters if you want to be fancy. You can use pipe to serve the mousse out using an icing tip. Stored uncovered in the fridge, the mixture gets even thicker.
This is amazing.
I promise.
It is so good, that after the first try I went on e-bay to buy a whipped cream dispenser/charger to be able to make it in bigger batches and be able to store it inside for a couple of days...(and of course that way I don't have to wait a whole day for the coconut cream to thicken.)

Here's my recipe:
Chocolate Avocado Mousse - 2-3 servings
1 ripe (soft) avocado
1 ripe banana
1 dollop Greek yogurt (1/4 cup if you're anal)
2 Tbsp quality cacao powder
2 Tbsp honey
Blend in food processor.
Comes out very thick and rich, because it's basically blended avocado, yogurt and banana, no need to wait for things or whip things.
edit: which I guess is not too dissimilar to this slightly more complicated recipe.

For people who do dairy:
Mascarpone and dark chocolate mousse:
500 g of mascarpone
some 170 - 200 g of dark chocolate
(vanilla or rum essence)
sour cream (200 - 400 g, experiment until you find what works best for you)
Melt the chocolate and stir it into the mascarpone. Add sour cream and any essences you are using and mix with a hand mixer. Serve cold.
The mascarpone can be substituted by Greek yogurt. And you can use coffee instead of chocolate, or even both coffee and chocolate![]()

I came up with something chocolatey today - a version of one of my favorite breakfasts. When I make this, I use a banana, 2 tsp unsweetened shredded coconut, 1 tsp unsweetened cocoa powder, 2 tsp ground flax seeds and add 125 g mozzarella. Well, today I took all took all ingredients but the mozzarella, added 1 tbsp butter and microwaved the mixture for 1.5 minutes. It came out wonderfully melted, blended and deliciousI then added the mozzarella (which also started melting in the hot mixture). This is easily my favorite breakfast
