    Smile Eggless and Dairy-free Homemade Mayo (recipe)

    I failed at making homemade mayo with eggs this week, so I tried an eggless (vegan) version and it turned out well, and actually tastes like mayo! Not the super delish mayo like Hellmann's, but... mayo.

    Soy-free, gluten-free, grain-free, egg-free, dairy-free.

    I would be mindful of this version vs regular egg-based mayo. the yolk is more nutritious overall than the nut.

    I'm not opposed to eggs, I love them, but my attempts with them in mayo failed this week. It's nice to have alternatives, especially for those who cannot have eggs or raw eggs.

    Raw, soaked nuts aren't terribly unhealthy, either.

    I was SO EXCITED until I saw the ACV.

    Candida no likey ACV. At least, mine doesn't. DRAT!!!

    Are all vinegars out? If not, you can use any type, I just reached for whatever was closest. You can also use all lemon juice and/or more mustard or mustard powder. It's just for flavor; the cashews are essentially a blank canvas so the coconut milk needs something to mask its distinct flavor.

    Do you think it would set without the gums? I don't use any product made from corn(xanthan) or legumes (guar) but I would like to try this.

    I'd like to say though that if you do not mind xanthan gum, and your efforts on the egg-oil mayo front failed for consistency reasons, xanthan gum will thicken your egg-oil mixture, so you do not have to go into the vegan version.
