How bad is nitrite?
I bought some very aged goat cheese in amsterdam but when i got home I found out it has got nitrite in it. How bad is this?
Depends on the individual and what they believe.
From my perspective, it gives me a migraine for 3 days so... not something I eat.
You're going to get a lot of debate as to the long term effects on the average guy.
I'm really surprised that you found it listed in cheese ingredients though.
There's a 6 hour seminar by Matt Lalonde (Login). Paraphrasing: basically he talks about nitrites used in meat. According to him it's not that bad. You can buy meat marketed as having celery extract to replace the nitrite normally used. It's still nitrite. If you are going to eat vegetables/plants you will be eating nitrites.
