Thanks, Primalchild. My grocery store carries some great nitrite-free sausages so I will stock up on those. However, I am allergic to fish so the canned tuna or salmon is a no-go. I like to have a chicken salad for lunch and while I prefer to saute my own chicken sometimes I don't have time so I always make sure I have canned flaked chicken in the cupboard!
Also, I am sorry but I just cannot stomach pure coconut oil on a spoon. I feel like I'm eating candle wax :-( Any alternatives to this? I just don't know how to add more fat to my lunches without nuts/nut butters. Usually I have a salad (chicken, veggies - spinach, tomatoes - some Kalamata olives and a generous drizzle of sesame seed oil). After my breakfast of eggs, berries and a spoonful of almond butter (or a coconut avocado smoothie) I am good for at least 5-6 hours but then I eat my lunch and I am hungry again within 3 hours. This is usually enough to throw a wrench into my plan of exercising after work on an empty stomach...
Don't forget about the uber easy egg salad for variety. Pre-cooked bacon is incredibly handy for a lunch.

I've never seen pre-cooked bacon before... but then again I've never looked! I'll keep an eye out for it next time I hit the grocery store.
Actually, I meant pre-cooked by our own hands! But I do think you can get pre-cooked bacon out there. You're from Canada as well so I think it's Maple Leaf maybe? I know they sell it at the Independent Grocers line of grocery stores. I would imagine it's at Metros and almost anywhere else though.

@Lovestoclimb - Lol @ the misunderstanding! I'm very picky about my bacon, though. I'm from a southeastern European background and the bacon that's available at your average Canadian grocery store just doesn't seem smoked enough for me. I think I'll have to make my trips to the East Euro vendor at the farmer's market a more frequent occurrence...

You could add half an avocado to that lunch salad for some additional, filling fat.
And/or drink some coconut milk with lunch.

I hear you about supermarket North American bacon.
Maybe if you could find organic uncured bacon, I guess it's called side pork, you might find some alder wood, and you could smoke your own? I've seen smoking cabinets in the sports department at BiMart, for hunters out in the woods. I suppose one would work in a back yard.
Or apple wood, that would be very nice. We have a lot of alder in Oregon, so I think of it first.
