    Almond flour: What's moderation?

    I know there are (at least) two schools of thought out there re: consumption of almond flour. For those who believe in "moderate" consumption, what do you consider moderation? Once a week almond-flour pancakes for breakfast? Is that excessive?

    And which is the lesser of two evils: the insulin spike from say, regular pancakes, or the oxidized PUFAs in the almond-meal substitute?

    rice flour pancakes IMHO would be best... i dont think the insulin spike is a big deal at all. As long as its not something that happens every 2 hours.

    These days, if I really feel like eating some bread, I have some damn sourdough baguette. Goes great lightly toasted in Kerrygold on the cast iron skillet. I don't use nut flours at all. Just my $0.02.

    Skip the nut flours, use tapioca, rice, arrowroot, coconut, and potato flours.

    I use almond flour/meal about once a month. I either make crackers or cover chicken in it and bake the chicken or fry it in lard or coconut oil. If I make crackers, I eat them all in a few days, not more than one week. I use them to dip in guacamole.
