    Primal Fuel


    I got a rack of lamb from my parents for my birthday. What's the best way to cook them?


    I have a crock-pot, oven, (broiler is off limits), and stove top. I was thinking just season them up and sear in a frying pan two at a time. I prefer red meat rare. Let me know if you have any tips or experience with this cut.

    I would just shove them in the oven. I like the fat all crispy. You can season with all sorts of stuff. Recently I smeared on Chinese 5 spice paste and they were delicious, but you don't really need anything because lamb is well flavoured. Sorry I don't have times etc because I don't cook like that. Shouldn't take long though, especially if you like them rare. I'm guessing half an hour in a med/hot oven? You could grill too.

    The River Cottage Meat Book (my fave!) gives the following times for roasting lamb:

    20-30 mins at about 220C / gas mark 7 /430F

    then 160C / gas mark 3 /320F for

    rare: 10 mins per 500g / lb

    medium: 15 mins per 500g /lb

    well done: 20 mins per 500g /lb

    then rest somewhere warm for about 15 mins at the end.

    Always works for me!

    I like to crust them in garlic, rosemary & oregano and then roast them till they're around 135 inside.
