From what I've read, organ meat is the "best" meat to eat as far as nutrition goes. It makes sense... after a tiger makes a kill, they go right for the organ meat.
Most people do not eat organ meat. My wife is 100% not down with eating liver, heart, etc.
Do you guys think it's possible to supplement vitamins/minerlal, fish oil to offset eating only muscle meat?
I was thinking about taking 2 multivitamins a day and 3 fish oil/vit D combo pills a day.

I think it's a good idea. I take cod liver oil for that reason, although I'm going to give liver another try soon!

If you are able to buy grass-fed ground beef from local farmers, I do believe they throw organs into the grind. Atleast the ones around my area do.
Irregardless if you found organ meat, I'd say keeping up with daily vitamins/fish oil would be recommended either way. Try to find fish oil that has been processed from smaller fish like mackerel/sardines (or hell, just eat them raw). Followed up with salmon would be my list..

The thought of eating organ meat turns me off incredibly badly. I supplement to compensate.

My understanding is you are really just missing out on Vitamin K2 (MK-4 form). All other vitamins & minerals can (and should!) be covered with a good 'primal' diet consisting of lots of different meats, lots of different veggies and if it comes to it a good solid multi

You can also take dessicated liver pills--Dr. Ron's is a source I trust and have used in the past, and I noticed a big difference in energy from them. (http://www.drrons.com/grassfed-new-z...ands-intro.htm Lots of supplemental organs available there) NOW liver pills/powder may be good as well (they are cheaper, and are also from a grass fed beef source) BUT may have arsenic problems (I believe. The beef is from Argentina and the water there has high arsenic levels, but google all this to learn more...)
