Oh yeah, that kind of thing is so much fun! We had a similar thing happen with a discussion of avocados.
Mayo is not that hard. I've been making it for over 30 years. If it doesn't emulsify, pour the liquid back into the measuring cup and start over with another egg in the blender, using the liquid mix. And if all else fails, use it as salad dressing. The trick, if you don't have an immersion blender, is to pour the oil very, very slowly, especially at the beginning. That's easier if you only fill the measuring cup half full.
