Need some help! What do I do with two pieces of lamb leg 'short cut'?
I see these steaks, if you will, have some connective tissue surrounding the edge. A nice bone in the middle too (YAY bone marrow!).
How do I cook it? Long and low in the oven or crock pot like osso buco?
Or like a steak until medium?

Do not allow yourself to become wrapped up in a food 'lifestyle'. That is ego, and you are not that.
Long and low, just like osso buco. Slice through the connective tissue in a few places to avoid the "steak" curling. Delicious!
