    Julienne Orange Carrots

    My sweetie's definitely NOT a carrot eater, but I made a terrific dish that even HE liked...

    I julienned a huge organic carrot with my old Salad Shooter so it was finely shredded (A box shredder or julienne maker, or just a good sharp knife will do.)

    While I was at it, grated a little orange rind for zest.

    Then I lightly sautee'd the carrots in butter along with the orange zest and a squeeze of fresh orange juice--less than a teaspoon, just enough for flavor.

    I let them brown slightly and get just tender, used a bit of sea salt, and now we want MORE!

    It WAS. Pretty sure I have another way to sneak carrots onto the dinner table! I LOVE them, myself...J., not so much.

    It does sound good. I used to do them sliced and pan fried then finish with a little honey - the orange rind would give the same effect I think. I'll have to try this.
