    Copious amounts of ground beef in my freezer.. what to make!?

    I have no idea how this happened but it seems at our last stocking of meat from our farm we took an overzealous amount of ground beef.. Any dinner favourite recipes you care to share would be greatly appreciated as always!

    Seasoned ground beef sauteed with shredded cabbage, carrots, onions and mushrooms. Maybe diced up broccoli. Sort of like a stirfry, but I like mine really soft. Season to taste. Add broth if you like it saucier.

    My kids take jumbo meatballs to school in their lunch. I make them with lots of finely minced veggies (yam, peppers, onion, carrots). They eat them cold, dipped in mustard.

    Meatloaf.

    Taco salad.

    Patty Melts (cheddar if you do dairy)

    beef patty parmesan (tomato sauce and mozza & parmesan)

    mushroom patty melts (smothered in carmelized onions and mushrooms in a butter sauce)

    beanless chili

    spaghetti sauce (over spaghetti squash or sauteed mushrooms and zucchini)

    hamburger soup

    goulash

    asian lettuce wrap (kind of like the first recipe, but finely diced, with asian spices/sauces)


    I'm the only one in the house eating primal on purpose, so sometimes the rest of the family has rice, pasta or tortilla on the side.
    My 8yo doesn't like cutting meat, so anything made with hamburger makes him happy.

    If you eat dairy, hamburger stroganoff. Cook the ground beef, then remove it from the pan and in the fat cook up a good amount of onions and mushrooms. Season with salt, pepper, mustard, a little tomato puree. Mix the beef into the onion mixture. Remove from the heat and stir in a cup of sour cream. We like it as it is but it would be good over cooked shredded cabbage.

    Meatloaf, meatballs (I just omit breadcrumbs but you can sub almond meal ), taco salad, fiery dan-dan "noodles" (served over shredded cabbage) , burgers with lettuce wrap.

    Stew the beef with pork belly.

    Brown the beef and pork belly with butter. Also brown onion, garlic, and ginger with butter.

    Add all to one pot, along with wine and some soy sauce. Stew for about 1 hour.

    Then add honey, salt, and pepper.

    Serve and enjoy.

    Lettuce leaf tacos!

    Spaghetti squash or zucchini noodles and meat sauce

    Burgers stuffed with blue or feta or cheddar cheese

    We power through a ton of ground beef due to its price. Good thread!

    One of my favorite throw togethers is to make small ground beef steaks. Mix a pound in a bowl with an egg and a handful of your favorite seasonings. The other night I used, salt, pepper, and a bunch of Old Bay (lol). Came out pretty good. Then I press it into a square tupper ware like a mold. Sear off both sides in a pan and then let them finish in the oven for a few minutes. My wife calls it Fake Steak.
