What a Thanksgiving weekend! We rocked the Turkey Leg 5k. I PR'd it at 30 minutes even. (I am not fast, this is a big deal for me!) The 3 older kids ran the 1k with their cousins. I ended up running it with Girl child #1. It was hilarious. About as much drama, tears and excitement as you could ask for in one loop of a park trail. Talk about an emotional roller coaster! Once she saw the finish line and realized everyone was cheering for her, she was on cloud nine. She's already asking when her next race can be. Our brunch afterward at WLB's brother's house was scrumptious. I took Pumpkin bread made with almond butter and coconut orange bread. They were both delicious. Add to that crestless quiche with spinach, mushroom and cheese, ham, and fruit salad and the spread was awesome. We stopped at home to shower and change and went to my parents house for the afternoon feast. My parents did a gluten-free spread. It was mostly awesome. The turkey... oh the poor turkey. My dad likes to carve early and then stick the platter back in the oven to keep warm.... which turns the whole shebang a into dried out chewy mess with requires smothering in either gravy or cran sauce. I didn't care that much. My attention was stolen by the incredible greek salad my sis in law made. My pies were so yummy- the chocolate pie was super dark, and wasn't as well received by my family. But the 2nd chocolate pie which we took to WLB's fam for dessert was slightly less thick and dark and was so perfect! They LOVED it.
Friday WLB went for a crazy run with Matt and running buddies while I finally introduced Alicia to yoga. There were kids everywhere, so it wasn't the centered oasis I wanted it to be, but it was still good. I helped her decorate for Christmas and arrived home late with no decorating mojo left to spare on my own digs. Today we went to our nieces baptism and family lunch. I took the same Greek salad that I mooned over before and passed the recipe around as others mooned over it too. I could live off of it. Mmmmm...
Greek Salad
2 heads of Romaine lettuce
¼ lb. bacon-crumbled
¼ lb. feta cheese
1/3 cup parmesan cheese
2/3 cup slivered almonds (browning is optional)
1 package of sliced mushrooms
2-3 avocados
3-4 roma tomatoes
Dressing:
1 tsp. salt
½ tsp. pepper
¾ cup light olive oil
4 Tbsp. lemon juice
3 garlic cloves (minced)
*Note: wait to add the dressing until ready to serve
I haven't been careful enough about what I've eaten. Nothing horrible, just a bite here and there out of courtesy or curiosity that I should have skipped. At one point my intestines were having muscle spasms (weird feeling- like regular baby kicks, but I'm not preg!). Mostly I've just been super bloated and uncomfortable in the evenings. I'm glad to be getting back to our normal food routines.
