    Anyone have any good recipes or tricks. I bought these, and got a great deal of about .90/each. I could've swore there was a soup recipe in NT, but when I got home, pulled out my copy, I came up short-handed. I'm still leaning towards soup, but does anyone have any other ideas?

    I LOVE oxtail! Here is the way I do braised oxtail


    1 onion

    2 carrots (you can leave these out if they bother you)

    2 stalks celery

    1 clove garlic

    oxtails

    1/2 cup red wine (burgundy if you can get it)

    fresh or dried thyme

    1-2 cups broth


    Heat a dutch oven to medium-high and add oil, whatever kind you like, but I typically use olive oil. Place your oxtail in the pan and brown, each side needs about 5 minutes. Pull the oxtail out and then add veggies (all chopped) and saute 5 minutes or so. Season the whole thing with salt, pepper, thyme, then pour the red wine and use a wooden spoon to scrape up the brown bits on the bottom. Place the oxtail on top and add whatever liquid (beef broth or more wine) until it reaches about halfway up the meat. Bring to a simmer, then put the whole thing (with the top on) in a 325 degree oven. Cook 2 to 3 hours or until the meat is falling off the bone. Remove the meat and simmer the remaining liquid uncovered until reduced by half, then add the oxtail back in.


    I am sure that you could also do this in a crock pot after you saute all the veggies and the meat and it would turn out fine.

    My mum sometimes use them like soup bones... The best soup is still a bit of bone/meat, in watercress and carrot, and heated and left at a low boil for hours.

    Oxtails! I saw these at a restaurant and they looked soooo goooood. My farmer was out at the market.

    I just threw them in the slow cooker for the day and they were delicious. Didn't do anything to them.
