    What can I do with Mayonnaise?

    So, I'm getting pretty good at making my own mayonnaise now.

    I've used it to make a broccoli salad, tuna fish salad, and chicken salad.

    Anyone know any other simple recipes that use mayonnaise?

    Thanks in advance for any ideas.

    Devilled eggs, mayo-based salad dressings, dips for stuff (I make a curried mayo dip for sweet potato fries--heaven!).

    Mix in some crushed garlic (you could roast it first if preferred) to make it an aioli. It's really good with roasted veg or in a lettuce wrap- or with all sorts of meats. I love mixing it up with my mayo- adding dill and lemon oil (awesome with fish or poultry), or chili powder and cumin, the possibilities are many as far as flavor profiles go!

    I have some Indian spices including curry powder. You just put in what, 1/8th teaspoon of curry powder for 2 tablespoons of mayonnaise or something like that?

    Wow, that's all science-y and stuff. I just keep adding spices until it tastes right--that's not very helpful, is it? I don't use curry powder (I mix my own spices or use curry paste) and am more of an intuitive cook. Also, spices vary so much in potency, particularly with curry powder since it's not always the same blend or ratio, so it's going to depend on what you have and what your tastes are. My spice tolerance is high, so I add some chili powder or some of the garam masala I brought back from my trip to India.

    However, using the curry powder should work pretty well, and I like to put in some lime juice to add some brightness to balance the flavours, especially if your mayo is more on the creamy side.

    You could make Sriracha mayo and serve it like so (not my blog; I just found it after a few seconds of Googling). Yeah, yeah, Sriracha probably isn't primal, but if there's anything worth 'cheating' on this WOE for, Sriracha sauce would probably be it. Just my opinion, though.

    Or, you could replicate some of Umami Burger's umami ketchup and then mix that with some mayo and other spices to make what will probably be the greatest (or worst, I really don't know) fry sauce of all time. Of course, the ketchup recipe is probably a little too time consuming. I might have to make this a special project at some point in the future...

    I like to mix wasabi into my mayo...Its good on salmon cakes, in tuna, as a veggie dip, in chicken salad... Actually, its pretty good with everything. I love Wasabi.

    Really, once you've got mayo down, the variations on seasoning are endless. I was at a high-end burger place* in Victoria that had the most killer bacon aioli that I need to try to replicate sometime.

    It is lovely with some capers, finely chopped gherkin, chopped dill and prawns (shrimp). Excellent as a salad or an accompaniment to fishcakes. Super good with a teaspoon or two of caviar on top!

    Also, if you peel and grate a celeriac and stir it into the mayonnaise with a desert spoon of Dijon mustard, it is a lovely accompaniment to ham.

    You can spread it on fish, like tilapia or salmon, then dip it in herbs and Parmesan cheese for a tasty crust.

    Homemade ranch or blue cheese or thousand island dressing.

    Deviled eggs.

    Tartar sauce.

    Potato salad or Cole slaw. Try radicchio as a cabbage alternative if you like something with a bite.

    Shrimp or crab salad. I make Boston lettuce wraps with crab mayo salad, avocado and bacon slices. It's divine. See food porn thread for pics of it.

    I haven't tried making my own mayo yet but your confidence in yours is nudging me to try it.
