    Critique My Meal Plans?

    Primal Fuel
    I've been trying to baby step down to paleo and life keeps throwing curve balls at me. I'm trying to plan out my meals for next week, and I'm hoping that between the planning and the budgeting (and the minimal prep), I'll be able to get one step closer to being fully paleo. This week is kicking my butt and it's irritating me. So, could you all take a look at my plan and tell me if there's anything you'd change? Do I need more fat? More protein? More veg? TIA

    Breakfast:
    - 2 green pepper rings with 2 fried eggs (like toad in the hole, but with peppers instead of toast)
    - Cooked frozen chopped spinach with butter

    Monday Lunch:
    - Greek stuffed peppers (stuffed with beef)
    - Pureed cauliflower and turnip soup (made with chicken stock)
    - Apple or Orange
    Tuesday Lunch:
    - Greek stuffed pepper (stuffed with beef)
    - Pureed cauliflower and turnip soup (made with chicken stock)
    - Apple or Orange
    Wednesday Lunch:
    - Avocado stuffed with tuna (w/ homemade mayo and diced celery)
    - Salad with vinaigrette
    - Apple or Orange
    Thursday Lunch:
    - Pan seared salmon
    - Salad with vinaigrette
    - Apple or Orange
    Friday Lunch:
    - Pan seared salmon
    - Salad with vinaigrette
    - Apple or Orange

    Monday Dinner:
    - Hardboiled egg
    - Roast beef rollups
    - Raw carrot sticks
    Tuesday Dinner:
    - Hardboiled egg
    - Roast beef rollups
    - Raw carrot sticks
    Wednesday Dinner:
    - Hardboiled egg
    - Roast beef rollups
    - Raw carrot sticks

    I'm thinking more protein? For example, monday's protein comes from 2 eggs, sliced roast beef, and possibly what ever you are stuffing those peppers with.
    I very loosely estimate that being anywhere from 25g - 50g or protein, which isn't a whole lot, unless you have a big plate of beef roll ups.
    There aren't many problems in life that can't be solved by sleeping it off, or adding more butter.

    Oh, sorry the peppers are stuffed with Greek-seasoned grassfed ground beef. I'll edit that to make it clearer. And it's two eggs at breakfast. Still too low?
