Just tried this today-
Take two baked sweet potatoes, peel and mash, and mix in ~1/2 to 1 cup of water and a dash of salt. Then take four eggs, and separate the yolks and whites. Mix in the yolks with the sweet potato, and beat the whites until they form soft peaks. Gently fold the whites in to the mixture.
Spoon small cakes onto a hot griddle or pan with some butter, and flip when edges start to look done. (You'll need a flexible spatula; these guys can be pretty fragile). Makes some awesome breakfast.
These sound good! Maybe a base for Tostada?
