    Was watching a UK cookery programme recently (Heston Blumenthal for anyone who's interested in looking him up) and Heston gave a really good tip for cooking with dark chocolate, which does actually work! Rather than adding sugar to sweeten, add a pinch of salt. Makes it rather more Primal when cooking with the darker chocolates ...

    I often just add some coconut oil. Works wonders as well!

    Mind you, I've just seen his recipe for cheese sauce - I wonder whether it would work with arrowroot instead of cornflour? To summarise, he suggests reducing 300ml of white wine by half, then adding chicken stock and reducing again, then adding grated cheese coated with cornflour and gently melting into the liquid, then using instead of a regular cheese sauce made with a roux base. Sounds worth trying, but I don't like the idea of that cornflour ...

    I add butter and sea salt when melting chocolate. Good stuff!

    also I always try to melt in a double boiler. I've gotten better results that way.
