I just wanted to share this easy and delicious recipe with you guys since it's been a big hit around my place recently.The ingredients are:
1 large white onion chopped
1 cup sliced mushrooms
1 red pepper chopped
1 cup chopped carrots
10-28 oz cleaned and diced tomatoes (I use fresh but canned works too)
Mixed vegetables of your choosing
32 oz beef stock
1-2 pounds stew beef or other cut of your choosing (burger works well too)
2 tbsp paleo cooking fat
1 stick/8 tbsp of organic unsalted butter
Spices of your choosing
1.First,throw all the veggies into a large saucepan with the cooking fat (butter,coconut oil,duck fat,and so on) and cook on medium-high heat for about 5 minutes,being sure to stir constantly.
2.Add in the beef,stock,tomatoes,and spices and cover the pan letting the soup simmer for an hour or so.
3.After the hour is up,let the soup simmer uncovered for 45-60 minutes.
4.Near the end of the process I add in a whole stick of butter,and it gives the broth a really rich taste and a nice creamy brown color.At this point you can add more stock if you want a thinner soup or coconut milk/heavy cream and some additional simmering time if you want a thicker end product.
This stuff is truly delicious,and a nice bowl of it fills me with a warm sense of calm and satisfaction.Makes 6-8 servings depending on the portion size,though it rarely lasts more than a day around here.

Cooking up a pot of this for lunch. Substituted the mushrooms for beets and blanched and peeled the tomatoes before putting them in. Seasoned with salt, pepper, a bay leaf, a little tabasco and a shot of montreal steak spice. Can't wait!
