I was reading this thread and a few others talking about too much muscle meat. So I decided to walk over to the local market and they carry a few different house-made stocks: beef stock, chicken stock, and fish fumet.

I've never heard of Fish Fumet before but the ingredients include fish bones so it seems like it would be a good choice for getting some gelatin in my diet. Thoughts on this? Also, for anybody that's had fish fumet, is it really fishy tasting/smelling?
