    Thumbs up Oyster Ceviche

    I picked up some oysters and cilantro at the market the other day, and thought I'd try my hand at making ceviche. It came out great!

    It's just oysters, lime, onions, garlic, tomatoes, cilantro, and jalapeno. Mix and chill for a couple hours.

    Nice. Anybody know if this affects the nutritional properties of oysters? I won't be bummed if so, but it's something I'd rather eat as 'medicine' than as yum...

    I can't find anything specifically about the nutrition of oysters in ceviche. My guess would be that some things change slightly, but since there is no heat applied it will be pretty similar to raw oysters.
