    Quick, cold weather soup

    6th day of snow....tired of this white crap.
    Hubby has a cold.....man is he a whiney brat when he is sick
    Daughter forgot to take out anything for dinner.......aaarrggg will she ever listen?
    I had 90 minutes between getting home from work, and leaving to go to Dog Training Class

    But we had dinner on the table, in 30 minutes!

    In a large pot, I used my cast iron dutch oven, on med high heat, saute

    1 TBL coconut oil
    Saute 2 med onions, chopped
    1 lb sliced mushrooms

    When onions are translucent add:
    1 1/2 pounds of shrimp....or cubed chicken--but allow time to cook through

    Add your seasonings and cook through 2-3 minutes, the protien will have time to finish cooking after adding the liquid.
    1 TBL cumin
    1 TBL garlic
    2 tsp curry powder
    1 TBL salt
    1 TBL black pepper

    Add
    4 cups chicken broth
    2 Cans coconut milk

    After heated through taste the broth, I ended up adding more salt and garlic, and curry. If cooking for 'mild tounges' remember to test it out when it is hot (temp wise) as curry kinda blooms.

    We topped with some cilantro and lemon zest. After thoughts was that some fresh lemon juice would have been good in it.. And some fresh grated ginger would have been good for 'Sickey's" cold, but I did not have any. I added shredded spinach to my bowl and served it over the greens YUM

    Lots of variations possible, could add more veggies, but we wanted a brothey soup last night.

    This served 3 and made left overs for 2, and these would be servings of about a cup and a half

    Good enough that I am making it again Sunday for office lunches, I will use pork and maybe add cauliflower instead of mushrooms..
