I think dextrose is just another name for glucose.
Since beginning a Paleo-influenced diet, I've continued to eat cured meats on occasion - usually hams etc. from the deli counter or in wrappers (after checking the ingredients label).
One of my favourites has been a spicy chorizo ring from Asda, which seemed okay compared to similar items but I noticed dextrose in the ingredients manifest, and after a quick shufti on Wikipedia discovered that dextrose is grape sugar. After scanning recipes on how to make one's own chorizo, it seems to be a standard ingredient in the actual dish.
I was wondering if anyone's done some research on sugars and how dextrose compares to other sugars - I haven't seen it mentioned often in the paleo community, if at all.

Dextorse is just glucose. It's used in curing some meats. It's really not a big deal. Check the label, if it has zero or one grams of carbs, then it probably isn't going to matter much one way or another. If it has 10, then you might have a problem.
As far as sugars go, it's not going to cause you any problems like fructose
