    Chicken giblets?

    What do y'all do with them?

    I usually throw them away, but I have this amazing pastured chicken, and I want to use them.

    Any ideas?

    I just stew them. Giblets+mushrooms+carrots+cauliflower+<other random veggies> = yum.

    Yeah, stew 'em ... chuck in mushrooms, garlic, onion and whatever you like. Simmered in beer?

    I usually either pan fry them in a bit of butter or lard or add them to the bones when I'm making stock. I will also use pan fried chicken/turkey/goose liver as a thickener for sauces and gravies - you just cook it through and then mash it up into a paste.
