    Hey everyone!
    I have an organic hog going in to the butcher this week and I plan to get the lard from it as well. When I would get a 1/4 cow I would get the tallow and use that too, but this is my first time getting a hog. I expect to get a good 5+ lbs of lard from this guy. A lot! Im curious what ideas you guys have on how to use it up in a timely matter.

    Oh man I can almost tastes all that bacon already! Cant wait....

    But seriously, apart from roasting and frying most of the uses I can think of are in pastry / batter type dishes I'm afraid.
