    So I'm feelin like it's time for some food pix! It's been too long!

    First meal is one I did over the weekend- It's that combo poutine/latke thing I was thinking about making. didn't turn out the way I was hoping but it was still good! I need to make my latke thinner, and I should have dried the sweet potato more before making it.

    Jamacan sweet potato latke topped with ham, tomato, provolone, home made mushroom gravy, bacon pieces and parsley to finish.

    Second meal is one I did last night. I've been trying to emulate pork bites from a Chinese restaurant I used to love. I still can't get it right though.

    Pork pieces rolled in almond flour, paprika, garlic, salt, and peppercorns fried in bacon fat. On the side: Eggplant topped with olive oil, tomato, provolone, peppercorns and parsley.

    I was helping my dad remove our old deck last night... cutting it up for transport to the dump and whatnot. I was using my phone while waiting for him to grab something in the house and I dropped it face down in the garage... screen shattered *sadface*. It still works but it just looks aweful! I may replace the screen if it gets to be unusable. Hoping after ecuador I can just buy a new phone.

    I missed the gabriel code stream yesterday. There is a repeat tonight. Hoping that I get the time to catch it tonight.

    Here's how I know I'm satisfied with life right now- last night I went out with an old friend: a girl that in past years I have wanted to get closer to. Normally the story goes like this- we go out, have an amazing night, and I come home swooning over the thought of being in a relationship with her. This girl is something special you know? The formula last night? Go out, have an amazing night, we go our own ways. While I do find her just as attractive as I used to the swooning part doesn't seem to be there. I'm feeling comfortable being on my own right now and I'm good with it! It's always been an odd relationship with her- we've got 5.5 years between us but we've gone on enough dates (and we both call them dates) to say at one point in our friendship that we were dating. It wouldn't be uncommon for us to grab dinner, see a movie, then grab a drink and sit on a patio and talk for 3-4 hours into ungodly hours. I still remember our... I wanna say 2nd date? I was 20, and I'm not sure if she was 25 or 26? But at this point I know her age and she didn't know mine. So we're driving home, flirting to all end, and laughing histerically when the awkward moment comes up. Girl: *In between laughter* "With my luck you're only like 20 years old". *Awkward silence* Then I confirmed her statement.

    It never did stop us from going out but there is a stigma to that kind of age gap. Even moreso she's got 2 kids (which she uses as her reason to not pursue relationships, careers changes... etc). I've got no problem with them (I've met them both multiple times and they seem to like me!) but I could see how that could be a detourant. Either way I'm happy to have gone out with her last night and not feel the need to bug her to go out again any time soon. If she messages me I would be on top of it- but I'm content to let it go. After 6 years of knowing her I'm glad to have her as a friend

    As a complete sidebar don't take my satisfaction as an excuse to not move forward. Still looking for work, still have school as an option in October, still working hard to make improvements.

    I've detailed my own forays into the dating world in my journal, and I hear you! It is great to enjoy one's own company and be comfortable. Relationships can be wonderful or they can be a prison. I hear so many people who don't pursue their dreams or set goals because of limitations in that area. No thanks! You have so much going for you, and you have so much to look forward to.

    Haven't been feeling well lately and I think I know what it is- I'm not getting enough veggies in me. What I'm finding difficult now that I've moved home is that my fridge is downstairs and the kitchen is upstairs. Getting veggies together to make a salad is a pain in the ass and I haven't been doing it much as of late. It's friday and I've eaten 1 salad this week. I do gnosh on cherry tomatos and bell peppers as is sometimes but I just need to find more creative ways to get veggies into my meals. Ideas?
