    Yeah Ecks, you are right about the IF, once I did try to eat something I felt a little strange afterwards. I think I am going to back off the fasting thing for abit, at least for that length of time. Congrats on the school, what are you taking?

    I like that idea of frittata buns. Especially with plenty of veg(I'm thinking mushrooms and spinach) to make them 'drier'. Need to give that a try soon.

    I used ground pork, spinach, shallots, coconut flour, and just a bit of baking powder. Worked like a charm and definitely the cleanest of my sammitches!

    Any chance you'll begin adding the RECIPES along with those teasing photos??? They look FABULOUS, but "just a bit" of anything means, well, anything..., especially if you are cooking-challenged as I am...
    And I second the idea of you opening a primal restaurant some day...

    I can do the fritattas right now!


    Ingredients:
    1/2 pound of ground pork
    2 large handfuls of fresh baby spinach
    1/4 teaspoon
    2 shallots
    1 Chunk of garlic
    1-2 tablespoons of fat for cooking (I used duck fat because that's my current addiction )
    4 eggs
    2 tablespoons of coconut flour
    1/4 teaspoon of baking powder.

    Optional/Suggested spices: Paprika (ask my best friend... I'm a bit of a paprika whore ), crushed chilies, fresh chives, and (not a spice) 1 tbsp of honey

    In a skillet:
    1. Heat pan on medium allowing your cooking fat to heat with the pan, add chopped garlic and add diced shallots.

    2.Once they have started to brown add the ground pork and chop away at it with the spoon until it's broken down to a softer consistency. Add salt while the pork is still cold in the pan to help bring out the juices and help the pork cook.

    3. Once the pork is 80% cooked mix in your spices (make sure they are well mixed in so that they don't burn on the bottom of the pan. If you're adding honey now is the time to do it but don't mix it in- let it sit on top of the ground pork (again to prevent possibility of burning on the bottom of the pan.

    4. Add the two handfuls of spinach on top of the pork (do not mix in) and cover for 5-6 minutes

    5. While the spinach is cooking...

    In a bowl scramble 4 eggs, the coconut flour, and the baking powder. Let it set for 2 minutes then mix it one more time.

    6. Once the spinach has finished cooking stir further into the pork mixture and spoon the mixture evenly into a mini pie pan
    I use this one: Buy Wilton® Mini Pie Pan - Nonstick 6 Cavity, Bakeware and find that its the perfect size for this recipe.

    7. Pour egg mixture over the pork and spinach and bake in the oven at 300 degrees for 15 minutes.

    8. Once cooked use a rubber spatula to lift the frittatta buns from the pan. I allowed them to cool in the pan but I'm sure they'd do just fine cooling out of pan.


    Hope that helps! I'll try post more recipes with the food I make as I go. I tend to make it up as I go and take a photo if it works out. More often than not it does but I've had more than a few monumental failures in the kitchen.


    On a side bar I have a terrible craving that I refuse to fill... Ramen noodles... dry and uncooked. I think it's a sign that I'm overdue for a salt refeed... I've been low on salt in the house the last 2 weeks and I keep forgetting to pick some up from the grocery store.
