    Ecks, that zucchini spaghetti sounds intriguing. How do you do it? I was thinking of using zucchini to do a lasagna type dish...

    Use a julienne peeler to julienne zuchinni into strips (Amazon.com: OXO Good Grips Julienne Peeler: Kitchen & Dining)

    You can find them at most kitchen stores or home outfitter type places. (Bed bath and beyond is where I got mine)

    For a lazaugna just use a regular peeler to cut thin strips of zuchinni and layer it with whatever you were going to put in.

    I love zucchini 'pasta!' And spaghetti squash too. Have you checked out Mark's recipes for sauces he posted the other day? Really, really good. They would be great on zucchini.

    It isn't actually available from amazon's book store. I had to use one of their third party sellers. But I think it's just the christmas rush and that it's a little late in the season to be buying stuff.

    So quick sidebar- found a paleo brownie recipe. Delicious! I wish I could take credit for it but I can't.

    Here's a shot of one that I made last night. Well I made a batch... but still...



    I swapped the agave for honey. Used only a cup of honey. And I swapped the chocolate chips for bakers chocolate. I added a banana but I can't taste it so it wasn't worth adding it in. Either way I'm very happy with how this turned out.

    Mmm... I brought one with lunch today. Now I'm excited for lunch time. It's all paleo! There are 7 ingredients total and I know what they all are!
