If you're looking for a nice chunk of bird fat, turkey tails are your friend. I found two at a local Central Market for $3.00. Cooked about an hour in coconut oil and beef tallow, leftover oils from dinner. Didn't need any seasoning. There's a coccyx in the middle, but the rest is easy to bite off or slice with a knife. I only ate ONE and I'm very full. Much bang for the buck on a budget at $1.50 for a full tummy. I definitely ate past satiety today! Mmmm, so fatty....

They are pretty good. I had one with some chicken liver over the weekend. Didn't really do anything special with it though. Just threw some spices on it. I actually got both for my dog, but thought I'd force myself to eat more liver this year.

I find them pleasantly gummy as well...is there a lot of collagen in turkey tails?
