    My favorite desert now. . . (uses dairy)

    Take a can of pumpkin
    Dump it into a bowl.
    Add lots of pumpkin pie spice (to your preference)
    I use just a little stevia (I have the pure kind so a little goes a long way).
    2 or 3 tablespoons unsweet coconut (you can certainly omit)
    3 eggs.
    About 1/2 cup of half/half - I'm sure milk or cream would work - probably even coconut milk would work.
    A spoonful of vanilla.

    Whisk till well mixed (important if you don't want chunks of eggs)

    Toss in a handful of blueberries / and a smidgen of walnuts (if you like) - gently mix.

    Pour into a greased pyrex pie plate (coconut oil of course).

    I then cook it in the oven at 350 degrees in a water bath for an hour or so till set. If you are in a 'sweet mood' drizzle just a little honey over it.

    I like it cold.
