There are two kinds: Virgin and 'refined' (the latter has no coconut flavor). I do prefer virgin because I love the flavor.

Virgin is generally extrracted from coconut meat using a low tchnology traditional method, boiling then scooping the oil off the top. Its then purified and packaged. Refined is extracted using hexane, more oil is etracted this way. The oil is then refined to remove, odour and impurities and also partially hydrogenated to raise its melting point. I dont think partially hydrogenatd oil is a great thing to eat. There is no such thing as extra virgin coconut oil. Extra Virgin refers to the first pressing of olives. Coconut oil does not use multiple levels of oil extraction so this term is non-sensical in terms of coconut oil. Dont pay extra for 'extra virgin' all unrefined coconut oils are basically the same.
