If you don't like it, don't eat it. After a while on the diet, try some fish again and see if you like it. It seems after a while your tastes change. I suggest salmon. You may also like shellfish. Mussels are my favorite.
You totally don't need coconut, coconut milk, coconut oil, MCT oil or any of that stuff. If you want to try something good with coconut milk, try making a thai curry. One can full-fat coconut milk mixed with 1/2 jar Thai Kitchen green or red curry. Add veggies and meat and cook over the stove. Delicious.
You don't have to eat nuts.
You could just eat the top of the pizza and leave the crust behind. When I was a kid I did not like hamburger so my mom made something called Pizza burgers. I wish I had the recipe, but I remember she'd put tomato paste and pizza seasoning and parmesan cheese in the burger meat. It was one of my favorite meals.
