    Quick and Easy Butternut Squash Soup

    2 bags Trader Joe's Pre-cubed Butternut Squash
    4 cups Chicken or Vegetable Stock
    1/2 Cup of 1/2 and 1/2 or Heavy Cream
    1 tbsp. Butter
    Salt, pepper, nutmeg, cinnamon to taste
    Is the pre-cubed butternut squash pre-cooked? I.e., when making this I will start from a squash, not a package. Should I roast the squash first?

    Yes, roast the squash in a 1/4 inch of water face down and cover with foil. Bake for about 40 minutes, then scoop out the goodness.

    The squash is fresh, just cut for you already. and NO don't roast it for this recipe. Bring to a boil then simmer in stock. Directions are just below the ingredients on the blogpost

    Oh, I just reread your question. If you don't have the cubed squash then you can do it either way. I find that for flavor purposes, boiling in stock brings out some great flavor.

    Tons of variations to this: I like to add a couple carrots to the squash when it is roasting or cooking, rounds out the flavors. Also, you can sautee an onion in butter in the pot until soft, then add all the ingredients, kicks things up a notch. You can also sub coconut cream or milk for the cream.

    Trader Joes has whole butternut squash for only $1.99 each, you can pick out the 3 or 4 lb ones and make a ton of soup.
