    Perfect Paleo recipe: Larb Gai a.k.a. Thai Chicken Lettuce Wraps

    I've been eating this both before and after Thanksgiving dinner, to make up for my excess indulgences at that meal That's not to say that this recipe is inferior in any way. For those unfamiliar with larb, it's basically cooked ground meat, chicken or pork seasoned with shallots, lime juice, chili powder and tons of beautiful fresh herbs, wrapped in crisp lettuce leaves. You can find the recipe on my blog here. It's made with all supermarket ingredients (make sure you buy a gluten-free fish sauce) and cooked in less than 10 minutes. Perfect healthy weeknight meal!

    Note: This recipe does include toasted rice powder (you can make this yourself) which is used to add nuttiness to the meat. Since it's only 1 tablespoon spread across 4 servings, I've kept it, but you can leave it out if you absolutely must. Enjoy!

    Sounds good! I've been head-over-heels in love with lettuce wraps lately; I had the most amazing Korean pork one at Epcot in early November. I still daydream about it.
