Tonight I came home from the gym, wanting something simple but sweet. Didn't really have much in the house. But came up with this. I love it!
1/4c Coconut milk
3tbs Chia Seeds
1/8 tbs Cinnamon
1/8 tbs Mint
1/4 tbs Honey
Not to sweet, just enough goodness to satisfy one's sweettooth.
Is that served cold or warmed? Be careful heating chia seeds due to the very high PUFA content.

a rare treat i do like, is grabbing 2 tbs of coconut butter mixed with 2oz of GT synergy kambucha raspberry chia, it makes the butter almost double in size and its quite good.
